Help!

So we've moved out of Tallahassee completely. We had about 12 hours notice that our furniture was being picked up. We just packed and cleaned through half the night and got up early to stuff it all into the cars and drive to Albany, Georgia, our new "home". The company had promised us the presidential suite at the new hotel, since we'll probably be here for a while and we're the only family with two kids, but by the time we left Tallahassee we'd been told no. I stepped one foot into our nice but ONE ROOM tiny new home and I just about lost my marbles. Jesse fought long and hard and late in the afternoon we got our suite! What a blessing! I'm still teetering on the edge of sanity, but at least we have a large suite with a kitchenette, separate living room, and even a jetted tub (which I've been in twice already). That being said, the kitchenette doesn't have a cook top or oven, so I'm trying to cook for my family with only a microwave and crock pot (and a very tiny freezer). I need some help with some easy to prepare meals and/or tips that can get me through the summer. I would VERY MUCH appreciate some help here!

Sorry about your whole situation! Glad you fought for your suite.

Here are two quick crock pot ideas. Throw a chicken breast or two and some salsa into a crock pot cook all afternoon. Shred it. Pour in some sour cream (can be light or fat free) during the last 1/2 hour or so. Now you have shredded chicken for soft tacos, or mexican salad or whatever.
Another easy one is to put chicken and FF Italian dressing in crockpot. Serve with pasta (I guess if you can figure out how to cook pasta)
You could do baked potatoe bar alla microwave. Alan is leaning over my shoulder right now and saying "Micorwave pizza, hot pockets, frozen burritos" YUCK! Have fun!

K, so my favorite crock pot recipe might still ask for more than you can accomidate but I
I'll share anyway. Put 2-3 frozen chicken breast in the pot. Mix 2 cans creme of Mushroom, 1 block softened cream cheese, and 1 packet of Good Seasons Itallian Dressing mix.Pour over the chicken and cook for 4 hours on high. Once done shred the chicken and serve over egg noodles. SOOO dang yummy! I make it all the time. You can also make a beef stew- only you keep it thicker instead of soupie. Serve over egg noodles and garnish with sour cream. It's like a stroganoff. It's really good! Hope these help.
